2 eggs
200 g sugar
200 g desiccated coconut
2 tbsp lemon juice or rum

Beat the eggs, sugar and lemon juice (or rum) until frothy, then stir in the desiccated coconut.
Bake using the convection (hot air) setting at 170–180°C (338–356°F) for 15 minutes.
